which would be best?? a g180 or a g200?

I'll answer this and save gene some answers. Castlemaine rod shop make mounts to put the G200 in a gem. Good luck doing the conversion for $70 - you will need more like $50,000 at least and for $7000 you can buy a broken webber complete with 1 jet. As for what other engines will fit, you can make pretty well anything fit (even a motorbike engine's), how much hp it will put out is totally dependant on the amount off 2stroke fuel you pour down the intake manifold.
